Friday Recap

I hope to start recapping my progress on resolutions and 30 before 30 every Friday, so here's hoping I keep up with it!!

This week I cooked 3 nights. Monday we ate lunch out since we were off work, so we weren't hungry for dinner. I simply gathered my recipes, made a grocery list, and hit up Publix.

Tuesday we had crockpot chicken and rice. I put everything in the crockpot before I left for work, but I made the rice and steamed broccoli when I got home. We also had Hawaiian rolls - yum-o! I found this recipe on pinterest (LOVE), and it was pretty good; however, there are some things I will do differently next time. First, I am going to let my chicken thaw. I didn't like how soupy it was. Second, I am not going to cook it on a day I'm at work all day. I think it is possible I cooked it too long. It was Jonathan's favorite of the week, and I thought it was okay. We will probably do it again but with the changes I want to make.

Wednesday night we just popped a Stouffer's lasagna in the oven, mixed a Caesar salad, and had some garlic bread. I'm not a microwave person, so it took a long time to cook in the over, but the actual work was easy! It was quite tasty too. 

Last night was my personal favorite - buffalo chicken wraps. I adapted a buffalo chicken taco recipe from Pinterest. It was so good, and it was really spicy. We will most definitely be making these again! I actually took pictures of my own for this meal. I forgot to for the others!

Next week we will be out of town until Tuesday evening, but hopefully I can still knock out a three meals @ home week - or more!!
